يمتد تاريخ الفول المدمس في مصر إلى آلاف السنين ويرتبط بالهوية الشعبية كوجبة أساسية للإفطار والسحور.
انتقل الفول المصري إلى المطابخ العربية والأفريقية عبر التبادل التجاري والهجرات حيث اكتسبت كل منطقة بصمة خاصة في إعداده.
